Have you left it on RAM test for a hour ? If things are progressively getting worse the longer its powered up, it normally means the RAM isn't being refreshed.

Edit: or the CPU is overheating , but would assume it would crash if that was the case.

Just come across another issue I think. I’ve added a 120gb hard drive but it is showing up a lot less. I know 120 is over kill but it’s all I have at the moment.

Don't use HDInsttools. It is horribly buggy and it will kill anything you try to partition with it. Use HDToolBox from 3.1.4 or 3.9. The best thing is to partition it with WinUAE first.
